Dough Ingredients:
-1/2 cup of oat flour
-1/2 cup of coconut yogurt
-1/2 tsp baking powder
-1/8 tsp salt

For the filling…mix
-1/4 cup cinnamon date spread + 2 sliced strawberries

For the PINK GLAZE (optional, but highly recommended for IG)
-3 tbsp powdered monk fruit or stevia
-1 tbsp strawberry jam
-1/4 tsp of beet powder (this is what makes it pink!
-3 tbsp almond milk

1. Preheat the oven to 375° F and grease a ramekin, or oven safe dish.
2. Mix the dough ingredients and knead until smooth. Roll out into a long thin strip.
3. Spread the date spread it over the strip of dough. Place the sliced strawberries on top and carefully roll into a pinwheel. Place the roll in a dish and bake for about 20 minutes until bubbly, puffed, and lightly golden on top.
4. While the cinnamon roll is baking, make the glaze. When the cinnamon roll is done remove from dish, glaze, and enjoy!
