VEGAN CHIA COOKIE

Ingredients:

- 1 cup of Birthday Cake Date Dough Mix

- 1 chia egg

- 1 tbsp of coconut milk

Instructions: Mix together the chia egg first, then mix/combine with the rest of the ingredients. Form dough balls and press onto a pan lined with parchment paper. Preheat the oven to 350F and bake for 12-15 minutes (or until lightly crisped)

To make a chia egg (not an actual egg, it’s really just a small serving of chia seed pudding) mix 1 tablespoon of chia seeds with 2.5 tablespoons of water. Let that sit to thicken into a gel for at least 5 minutes and you have a chia egg! You can do this with flaxseed too as a vegan egg alternative 🌱 and it works for making chewy date dough cookies!
