PUMPKIN STUFFED FRENCH TOAST

Instructions

First, you’ll need 2 slices of sourdough bread

Pumpkin Filling:

- 2 Tbsp pumpkin purée
- 1 Tbsp Pumpkin Spice Date Spread
- 1 Tbsp vegan protein powder
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon

 

Egg wash:

- 1 egg
- Splash of unsweetened cashew milk
- Sprinkle of cinnamon
- Dash of pumpkin pie spice

Start by adding all the pumpkin “filling” ingredients into a small bowl and mix til everything is fully combined. Next, add the “egg wash” ingredients to a bowl and whisk. Grab two slices of sourdough and spread the pumpkin filling onto one slice, then top with the other slice to make a sandwich. Dip the sandwich into the egg wash making sure to completely coat both sides. Then place the sandwich into a pan over medium heat with a little oil. Cook on both sides flipping halfway through until nice and crispy. Then serve with your favorite toppings and enjoy!

- creamy peanut butter
