• 1/3 cup runny peanut butter
  • 3 eggs
  • 2/3 cup sugar (or any granulated sugar substitute)
  • Vanilla
  • 1/4 cup almond milk
  • 1/4 cup Original date spread
  • 1/2 cup + 2 tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt

~ 1/4 cup peanut butter to swirl on top
~ 2 tbsp sugar to sprinkle on top

Preheat the oven to 350 and line 9 muffin tins with liners and spray oil. In a large bowl add the wet ingredients and mix. Then add in the dry. Mix well. Place the mix into all liners. Swirl peanut butter on top and sprinkle with sugar. Bake for 10 minutes. Rotate the pan and bake for another 5 min. Remove from the oven and let cool completely. Enjoy!
