Ingredients:
- 1/4 cup of vanilla date spread
- 3/4 cup unsweetened vanilla yogurt (greek or coconut if dairy free!)
- 3 eggs
- 1/4 cup avocado oil
- 2 tsp vanilla extract
- 2 Tbsp lemon juice
- 2/3 cup cassava flour
- 1/3 cup tapioca flour
- 2 scoops collagen protein powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 Tbsp lemon zest
Instructions:
Begin by adding the eggs into a bowl and give them a nice whisk. Next, add in the yogurt, avocado oil, vanilla extract, and lemon juice and stir until well combined.
Add in cassava flour, tapioca flour, coconut sugar, the collagen protein powder (optional), salt, baking powder, and baking soda. Mix. Fold in the lemon zest and add your batter to a greased and/or parchment lined loaf pan. Bake at 350 F for 45min or until a toothpick comes out clean. Once the loaf is done baking, allow it to sit in the bread pan for about 10min before removing, then place on a cooling rack for a bit. Once completely cooled, slice & enjoy!
